Mitchell's favorite knife.  Small enough to comfortably peel an apple but still big enough for most cutting and chopping jobs.  Lick test approved. This knife is only available in 1/8" AEB-L stainless and 5/32" 80crv2.

Check the Metals page to learn more about AEB-L.  This is a knife blank, meaning that its a thick piece of metal cut in the shape of a knife; it isn't sharp and there is no handle.  Your job is to turn it into a beautiful knife. 

We highly recommend using our AEB-L stainless option for our kitchen knives. The stainless will offer better corrosion resistance and last longer in the kitchen. Otherwise we still offer our 1095 which is still a good all around steel option.

All knife quality steels are annealed to make shaping your knife easier. Steel will need to be heat treated(hardened) in order to keep an edge.
