Fillet knifes are great for fish and other things you'd need a thin flexible blade for.  This knife if only available in .098 14C28N, a great high carbon stainless steel and 1095 .125", a great all purpose steel. This is a knife blank, meaning that its a piece of metal cut in the shape of a knife; it isn't sharp and there is no handle.  Your job is to turn it into a beautiful knife. 

We highly recommend using our 14C28N stainless option for our kitchen knives. The stainless will offer better corrosion resistance and last longer in the kitchen. Otherwise we still offer our 1095 which is still a good all around steel option.

It comes annealed to make shaping your knife easier. Steel will need to be heat treated(hardened) in order to keep an edge.
